So I usually eat all raw, even when I cook food for my family just because my system is so sensitive but this one I could not resist.  And it was Oh So Good! Thank goodness for peppermint and fennel essential oil, rubbed on belly for digestion support along with enzyme capsules:) So here is a simple and delish meal.  Oh and don’t forget to serve this with a large, beautiful green salad. 1 package yeast 1 cup warm water 1 cup unbleached white grain wheat flour  1 cup whole wheat flour 2 Tbs olive oil 1 tsp sea salt 1 tsp honey ½ tsp basil *Add an oil! Try one drop Basil essential oil.  Dissolve yeast in water and let set for 10 min.  Add everything else and blend well.  Spread out on pan wetting hands in cold water if needed, try not to add very much flour.  Spread red sauce (recipe below) and top with nut cheese, vegan cheese or low fat mozzarella cheese. Add the onions and kale (see below). Cook at 375 degrees for 10-12 minutes. Saute 1 large sliced onion in olive oil on low for 3 minutes then add chopped kale.  Drizzle with lemon juice or balsamic vinegar, 1 clove crushed garlic and sea salt to taste. Use a healthy option for red sauce or prepare home-made: ½ large onion, chopped 2 Tbls olive oil 2 cups cherry tomatoes 1 large tomato 2-3 cloves garlic crushed 1-2 small zucchini 1 tsp dry oregano 1 tsp dry basil *Add an oil! I LOVE spring time! Time for renewal! I love watching new flowers bloom, life coming forth all around me.  I love the new desire to start fresh and move forward.  For me this is when I make new goals.  It is a perfect time to clean up our food intake. The food we take into our body directly affects the way we feel physically and even more important our food affects our emotions.  Try this easy and high vibrating, colorful Spring Roll Bowl. Mango Salad Try this packed full of nutrition and bursting with flavor salad   3 large Mangoes pealed and diced 3 large avocados pealed and diced 1 large red bell pepper diced 1/2  cup diced red onion 1 cup chopped cilantro 1 cup chopped parsley 1/2 cup olive oil juice of 1 lime sea salt and black pepper to taste Mangoes are full of Vitamin A Vitamin A helps cell reproduction. Power Packed Lunch in a Cup My days are busy!! But I have learned how important it is for my mind and body to have nutrition.  This is something anyone and everyone has time for.  I work with many people who tell me they really, really want to feel better.  They want more energy and they are willing to make changes in their life but then they come back with, “I don’t have time to prepare food” or “I don’t have time to exercise”. I have to boldly (but gently) tell them they may not be around for what they think is SO important.  Too many people are dying before they even now what happened or are hit with a debilitating condition that no longer allows them to do what they “thought” was so important.  Take care of yourself first! You deserve it! Healthy Hot Chocolate, My Favorite!!

 Healthy Hot Chocolate   6 cups hot water 1/2 cup raw cashews 1-2 Tbls Cacao Powder (healthy cocoa) 4 whole dates or 1/4 to 1/2 cup chopped dates 1/4 to 1/2 cup raw honey 1 tsp ground cinnamon 1/4 tsp ground cloves 1/2 tsp ground nutmeg 1/2 tsp vanilla powder Blend until smooth, around 1 to 2 minutes.  You can omit the spices and do 2 drops high grade essential oil instead.  You can also do cold water for regular chocolate milk.  Feel free to try raw almond too, but be aware the cashews are creamier.  Chocolate is GOOD for you!!! Healthy Alfredo Sauce! Yes, Healthy!

Zucchini Alfredo 1 cup raw cashews soaked overnight ½ cup pine nuts, almonds, macadamia nuts or brazil nuts- I prefer the pine nuts (if using a nut, soak over-night) 1 ¼ cups hot water 1 tsp sea salt Fresh ground black pepper 3 cloves crushed garlic 1 tsp fresh lemon juice or *Add an oil!
